Recipe: Fifteen Cornwall’s Banana Pancakes




I had a wonderful breakfast at Fifteen Cornwall on a crisp and sunny autumn weekend - you can read about it in the post before this one.

The chef very kindly agreed to give me his ne'er before written down banana pancake recipe, pictured above. So, here it is, a Muesli Lover exclusive for your breakfast pleasure...

Ingredients - makes up to 30 individual small pancakes
16 eggs – separated
500ml of milk
4 teaspoons of baking powder
4 tablespoons of icing sugar
600g of plain flour
Zest of 4 lemons
6 roasted bananas (good size – this will need to be done in advance)

1. Mix egg yolks, lemon zest and milk together
2. Sift all the dry ingredients together and then mix in with the above
3. Add in roast bananas and mix
4. Whip egg whites and fold through with above mixture
5. Pour the mixture into a frying pan (the amount will be dependent on the size that you would like your pancakes)
6. Cook until pancake is golden
