Recipe: fruity quinoa porridge


This is a curious one because one thinks of quinoa as a lunchy item, but it works well at breakfast, particularly if you want a change from your daily oats. Thanks to 101 Cookboks for the inspiration. I've slightly adapted their recipe.

Ingredients (serves 3)

1 cup of soya milk (I also tried it with low-fat coconut milk, creamy and delicious)
1 cup of water
1 cup of rinsed quinoa
2 cups of chopped fresh strawberries
1/2 teaspoon of ground cinnamon
pinch of ground nutmeg
2 tbsp of chopped pecans (or walnuts)
4 tsps of manuka honey
1 tsp flaked toasted almonds

Method

Combine the milk (soya, dairy or coconut), water and quinoa in a saucepan. Bring to the boil over a high heat. Reduce the heat to low, cover and simmer for 15 minutes or until the liquid is absorbed. Turn off the heat, let stand covered for five minutes. Stir in the chopped fruit, nutmeg, pecans, cinnamon, and transfer to bowls and sprinkle with flaked almonds. Warm the honey in a saucepan or ladle over a stove and drizzle over the quinoa.

    Have you ever tried a (seedy) toast with a layer of mustard, then some mayo and a few fat slices of avocado? Bizarre, I know, but it works! I think I nicked that from the Wednesdaychef :)

  2. Thanks for your tip (I won't even try to type your name correctly!). A friend recently introduced me to seedy toast with Marmite, then avocado and possibly bacon on top... delicious. Thought I'd do a post on it soon. Will also try yours - I can imagine it's divine.
